INGREDIENTS

  • 8 red apples (about 1.5 kg) cut into cubes
  • 1 tart green apple (Granny Smith), grated
  • 1 tablespoon butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • 1 sachet vanilla powder
  • Lemon zest
  • 1 pinch of salt

For the crumble topping:

  • 1 cup all-purpose flour
  • 1 cup cold butter
  • 1/2 cup granulated sugar
  • 1/2 cup ground almonds

For serving

  • Vanilla or mastic ice cream, or any of your preference

METHOD

  1. Preheat the oven to 180°C (350°F). Melt the butter over medium heat. Add the cubed apples, the grated apple, the sugars (granulated and brown), the cinnamon, the vanilla, the lemon zest, and the salt, and stir. Cook for 8-10 minutes until they soften and become glossy, but not mushy.
  2. Place the apples in a round baking dish, 26-28cm in diameter. Add the flour, the cold butter, the sugar, and the ground almonds.
  3. Rub with your hands until a coarse crumble forms. Place this topping over the apples and bake in the oven for 30-35 minutes until the surface is golden brown.
