• --- 250g anari cheese (Cypriot fresh whey cheese, similar to sweet ricotta)
• --- 2 tablespoons sugar
• --- 1 egg
For the Apples
• --- 3 large apples, peeled and diced
• --- ½ lemon, juiced
• --- Cinnamon
For the Topping
• --- Flaked almonds
METHOD
1. Beat the eggs, sugar, and vanilla in a mixer until light and fluffy. Add the oil, milk, flour, and baking powder. It will form a smooth batter.
2. Beat the anari cheese with the sugar and egg. In a bowl, mix all the ingredients for the apples. Pour 3/4 of the batter into a buttered 26cm round baking dish.
3. Layer half of the apple mixture over the batter, followed by the anari mixture, then the remaining apples, and finally the rest of the batter. Sprinkle with flaked almonds. Bake in a preheated oven at 170°C for about 35-40 minutes. Once cooled, dust with icing sugar.
