Broad Beans with Sausages and Eggs

INGREDIENTS
- 500g fresh broad beans, boiled
- 3 Cypriot sausages
- 50ml olive oil
- 50ml vinegar
- 4 eggs
- Black pepper
- Salt
METHOD
- In a pot with plenty of water, boil the broad beans until tender, then drain well.
- Cut the sausages into small pieces and sauté them well with the olive oil in a non-stick pan. Add the broad beans and the vinegar.
- Beat the eggs and add them to the pan. Add salt and pepper, stir, let the eggs set, and serve.
