For the crumble

• --- 2/3 cup (90g) light brown soft sugar
• --- 3 tablespoons (45g) granulated white sugar
• --- 1 pinch salt
• --- 1 teaspoon (4g) cinnamon
• --- ½ package (125g) unsalted butter, chilled and cubed
For the topping
• --- ½ cup (65g) chopped walnuts
For the butter caramel sauce
• --- 1 cup (230g) sugar
• --- 1/3 package (85g) unsalted butter
• --- ½ cup (125ml) heavy cream
• --- 1/3 teaspoon salt
• --- ½ teaspoon ground cinnamon
For serving
• --- Vanilla or mastic ice cream
METHOD
Prepare the filling:
1. Peel and thinly slice the apples. Drizzle with lemon juice and stir gently to prevent them from oxidizing and turning brown. In a large pan, melt the butter and sauté the apples for 5-7 minutes, then add the brown sugar, cinnamon, and vanilla. Stir gently until they soften but still hold their shape slightly, about 10 minutes. Transfer the filling to a 24-25 cm round baking dish and spread it evenly.
Prepare the crumble:
1. In a bowl, combine all the crumble ingredients. Rub with your fingertips until you get a coarse crumb texture (like wet sand). Sprinkle the crumble over the apples and scatter the chopped walnuts over the entire surface. Bake in a preheated oven at 180°C for about 40 minutes, until the surface is beautifully golden brown and the edges are caramelized.
Meanwhile, prepare the butter caramel sauce:
1. In a non-stick saucepan over medium heat, add the sugar without stirring until it melts and turns a golden color, becoming caramel. Stir and carefully add the butter. Be careful, as it will foam up. Continue stirring and add the heavy cream, salt, and cinnamon. Boil for 1-2 minutes and let it cool slightly before pouring it over the apple crumble. Serve the Apple Crumble warm with a scoop of vanilla or mastic ice cream and plenty of butter caramel sauce.
