INGREDIENTS

  • 80g olive oil
  • 160g all-purpose flour
  • 30g walnuts
  • 10g pine nuts
  • 20g sliced almonds

For the syrup

  • 360ml water
  • 320g grape molasses
  • A little grated nutmeg
  • 1 cinnamon stick
  • Zest from one orange

For serving

  • Ceylon cinnamon

METHOD

  1. Toast the nuts separately by type in a small pan and set them aside. In a pot, add the water, grape molasses, nutmeg, cinnamon, and orange zest.
  2. Once it starts to boil, let it simmer for 3 minutes, then remove it from the heat and set it aside. Afterwards, remove the cinnamon stick.
  3. In a heavy-bottomed pot, add the oil and wait for it to heat up very well. You'll notice its color lighten, but be careful not to let it burn. Once the oil is well heated, lower the heat and add the flour, stirring continuously with a wooden spoon.
  4. Once the flour has browned, slowly pour in the syrup, stirring continuously and very well at the same time. Be careful not to get burned, as splashes may occur at this stage. Once it thickens, add the slightly crushed walnuts, pine nuts, and almonds.
  5. Stir to distribute the nuts evenly throughout and spread it well in the pot. Form into balls and sprinkle with Ceylon cinnamon.
