1. In a saucepan, add olive oil. Add the onions cut into slices and let them caramelize.
2. Once cooked, remove the onions and strain them. Return their oil to the saucepan. Add the liver, and once it starts to absorb its juices, add the cooked onions, the spices, and salt.
3. Stir and add a little water. Let it simmer slowly over low heat until it thickens.
