1. Gather the mushrooms found under the Anathriki trees. Wipe them clean with a damp paper towel or cloth. Cut off the stems and slice them vertically.
2. Pour the olive oil into a frying pan and once it heats up, add the mushrooms. Fry them until all the liquid evaporates from the mushrooms and they turn golden brown.
3. Sprinkle them with salt and crack the eggs over the mushrooms. Using a wooden spoon, stir everything together so the eggs mix well with the mushrooms. Serve while hot.
