1. In a bowl or blender, combine the eggs, oats, cottage cheese, and baking powder, and blend until you have a smooth mixture.
2. Add a little honey, cinnamon, desiccated coconut, and vanilla if desired, and mix until combined. The mixture should be relatively thick but still pourable.
3. Heat a non-stick pan over medium heat and add a little sunflower oil. Pour small amounts of the mixture to form pancakes.
4. Cook for a few minutes until bubbles appear on the surface and the bottom is golden brown, then carefully flip them and cook on the other side.
5. Continue with the remaining mixture, adding a little oil to the pan if needed.
Serve the pancakes warm, with fresh strawberries, banana, blueberries, walnuts, honey, or hazelnut spread.
