1. Peel the potatoes and cut them into sticks, as uniformly as possible. If desired, place them in a bowl of cold water for 20–30 minutes. This helps remove excess starch and makes them crispier.
2. Drain them and dry them very well with a towel. This is one of the most important steps. If they have moisture, they won't get crispy.
3. Pour in the olive oil and sprinkle with salt, paprika, and garlic. Stir to ensure the ingredients coat the potatoes well.
4. Spread them on a baking tray lined with parchment paper, in a single layer, without them touching each other.
5. Bake in a preheated oven at 200°C, ideally with fan assist, for about 40-45 minutes.
