Recipe from Radio Producer at Zenith FM 96.4, Frederiki Menelaou
INGREDIENTS
• 2 Sea bass, cleaned
• 50 Lemon juice
• 90 Olive oil
• 1 Tablespoon of mustard
• 1/2 Bunch of parsley and dill
• Lemon zest

• 1 Tablespoon of honey
• Salt
• Pepper
For Serving
• 1/2 Pomegranate, deseeded
METHOD
1. Season the fish well with salt and pepper and set aside while you preheat the oven to the grill setting with fan at 180°C (350°F).
2. Drizzle a little of our olive oil over the sea bass and place them in the oven; they don't need long, about 7-8 minutes per side, depending on their size.
3. Meanwhile, in a blender, add the lemon juice, olive oil, mustard, honey, dill, and parsley and blend until well combined. Serve the fish drizzled with the dressing and garnished with the pomegranate seeds.
