INGREDIENTS
• 1 Liters (4 cups) of water
Semolina Halva with Mastic and Almonds (Soumada Halva Recipe from Cyprus) - A Sweet Treat for Everyone to Enjoy! (Halvas me Soumada kai Amygdala - Cypriot Style!)
• 1 Cup (300ml) of soumada (bitter almond syrup)
• 1 Cup (170g) of coarse semolina
For Serving
• Coarsely chopped almonds
METHOD
1. In a saucepan, add the water and the soumada and bring to a boil. Gradually add the semolina and let the mixture boil again.
2. Reduce the heat to medium and cook, stirring constantly for 5 minutes. Pour the halva mixture into a round dish, 26 cm, and let it cool and set.
3. Place the halva in the refrigerator to chill and then serve.
