1. In a large bowl, mix all the ingredients for the marinade. Place the spare ribs in a baking dish and pour the marinade over them.
2. Mix and turn the spare ribs so the marinade coats them evenly. Cover with plastic wrap and place the dish in the refrigerator for at least 2 hours or overnight.
3. Turn the spare ribs occasionally so they marinate uniformly. Preheat the oven to 180°C (350°F).
4. Take the dish out of the refrigerator, remove the plastic wrap, and cover it with non-stick baking paper and aluminum foil.
5. Bake in the preheated oven for 1 ½ hours. Uncover and continue baking for another 30 minutes or until the spare ribs are nicely browned and the wine has evaporated.
