Spring Rolls with Minced Meat and Shrimp

INGREDIENTS
• --- 1 package (450g) phyllo pastry
• --- ¼ cup unsalted butter
• --- 500g minced pork
• --- 1 can finely chopped mushrooms
• --- 6-7 finely chopped spring onions
• --- 2 eggs
• --- 500g small shrimp, boiled and finely chopped
• --- ¾ cup cooked, broken vermicelli, parsley
• --- Salt
• --- Pepper
• --- ½ cup dry white wine
• --- 1/3 cup sunflower oil
For serving
• --- Sweet and Sour Sauce
• --- Sweet Chilli Sauce
METHOD
1. Boil the vermicelli for a few minutes until it softens, rinse with cold water, and drain.
2. Heat the butter in a deep pan and sauté the minced meat until it absorbs all its liquid.
3. Add the spring onions, mushrooms, parsley, and beaten eggs. Sauté for 2-3 minutes and remove the pan from the heat.
4. Add the vermicelli, wine, salt, pepper, and return to the heat to evaporate the moisture. Divide the phyllo sheets into strips.
5. Fill, butter, and bake in a preheated oven at 180°C for about ½ hour until golden and crispy. Serve with Sweet and Sour Sauce or Sweet Chilli Sauce.
