Stuffed Sweet Potatoes with Minced Meat, Spinach, and Cheese

INGREDIENTS
- • --- 1200g sweet potatoes
- • --- a little olive oil
- • --- 250g minced beef
- • --- 200g concentrated tomato juice
- • --- 1 onion, finely chopped
- • --- 1 cup spinach leaves
- • --- 160g mozzarella cheese
- • --- 1 tablespoon olive oil
- • --- 1 teaspoon salt
- • --- 1/3 teaspoon black pepper
- • --- 1 teaspoon garlic powder
- • --- 1 teaspoon paprika
METHOD
- 1. Preheat the oven to 180°C fan-assisted. Rinse the sweet potatoes well, prick them, and bake them in the preheated oven for 50 minutes, or until completely soft.
- 2. It may take longer depending on their size. Let them cool. Meanwhile, in a pan, add a little olive oil and sauté the onion for a few minutes until it starts to brown.
- 3. Add the minced meat and stir until it changes color. Add the tomato juice and spices, lower the heat, and simmer for 10 minutes.
- 4. Add the spinach, stir for 2-3 minutes until it wilts, and remove from heat.
- 5. Cut the sweet potatoes in half and place them on a baking tray. Press them with a fork to form a 'boat' and fill them with the minced meat. Sprinkle with mozzarella on top. Place the sweet potatoes back in the oven and bake until the cheese melts and turns golden.
