INGREDIENTS
- 7 cups self-rising flour
- 6 teaspoons baking powder
- 4 teaspoons aniseed
- 1 cup sugar
- 1 cup vegetable shortening or margarine
- 1 cup oil
- 1 cup ouzo
- 1 cup orange juice
- Boiled sesame seeds for coating
METHOD
- In a bowl or using a mixer (with the dough hook attachment), add the flour, baking powder, aniseed, sugar, and vegetable shortening, and mix well.
- Next, add the liquids (oil, ouzo, and orange juice) and knead the dough. Divide the dough into 9 pieces. Take one piece and form it into a log. Roll it in the sesame seeds and place it on a baking tray lined with non-stick parchment paper. Score it into one-centimeter pieces. Repeat the same process with the rest of the dough. Bake in a preheated oven at 180°C (350°F) for 30-40 minutes.
- Once everything is baked, cut along the score marks and return them to the oven at 100°C (210°F) for 1.5 hours to dry out into rusks (paximadia).
