INGREDIENTS
- 200 gr. orzo
- 4 boneless, skinless chicken thighs
- 4 large onions
- 3 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon thyme or oregano
- 2 tablespoons balsamic vinegar
- 1/2 cup dry white wine
- 1 vegetable stock cube dissolved in 700ml water
- salt
- pepper
- 100 gr. grated graviera cheese
METHOD
- Cut the chicken into cubes and the onions into thin slices. In a pot, sauté the onions with the olive oil and butter for 15-20 minutes until they caramelize, along with the thyme.
- Add the balsamic vinegar. Add the chicken and sauté for 5 minutes, then add the orzo and sauté for 2 minutes. Deglaze with the wine and let the alcohol evaporate.
- Gradually add the stock, salt, and pepper, and cook for about 15-20 minutes until the orzo is done. When the dish thickens, remove it from the heat and sprinkle the cheese on top to melt. Optionally, grill for 2 minutes (in the oven) to form a crust.
