Salad with Cabbage, Fennel, and Apples
INGREDIENTS
• 3 cups cabbage (krabi), thinly sliced
• 1 fennel bulb, thinly sliced
• 1 Royal Gala red apple
• 1 Granny Smith tart green apple
• ½ cup raisins
• ½ cup coarsely chopped walnuts
• 1/3 cup olive oil
• 3 tablespoons rose honey
• 1 teaspoon salt
• A pinch of pepper
METHOD
1. Rinse the apples and grate them using the coarse side of a grater. Place them in a bowl with cold water and lemon juice until you need them to prevent them from browning. Drain them well and let them dry completely. If you have time, dry them on paper towels.
2. In a salad bowl, combine the cabbage, fennel, apples, raisins, and walnuts, and mix them together. In a blender, combine the olive oil, rose honey, salt, and pepper. Blend well until the mixture is smooth and the salt has dissolved.
