INGREDIENTS

  • 1 kg Village Flour
  • 1 sachet (11g) dry yeast
  • 1 ½ tablespoon sugar
  • 1 tablespoon salt
  • ¼ cup (60g) olive oil
  • 1 cup (250ml) milk
  • 1 cup (250ml) water
  • A little cinnamon (optional)
  • A little ground cloves (optional)
  • 2 pieces (400g) mature halloumi, diced
  • ½ cup fresh mint, coarsely chopped
  • 1 teaspoon dried mint
  • 1 ½ dry onion (200g), coarsely chopped

For the topping

  • Sesame seeds
  • Nigella seeds (black sesame)

METHOD

  1. Place all ingredients in the mixer bowl and knead for 5 minutes until you have a soft dough. Divide the dough into 3 equal parts, shaping them into loaves.
  2. Moisten the dough and roll it in the sesame seeds and nigella seeds (black sesame), then let it rise.
  3. Once they have doubled in size, bake them in a fan-assisted oven at 180°C for approximately 50 minutes.
