1. In a bowl, add the cottage cheese, oats, chia seeds, coconut milk, maple syrup, and peanut butter. Mix very well until the mixture is well combined.
2. Cover and refrigerate overnight so that the oats and chia seeds absorb the liquids and develop a more velvety texture.
3. Serve with pan-fried banana (which we cook in a pan, drizzling it with a little maple syrup), toasted peanuts, and granola.
